Sometimes, OK a lot of the time, people just don’t feel like spending an hour chopping, dicing and cooking to prepare a meal that takes 5 minutes to eat. If that sounds like you, then this is your lucky day. Well lucky day might be a stretch but this super quick and easy pasta dish will definitely lighten your load. the whole meal takes only about 1/2 an hour to make and is really quite delicious. It might sound odd to make a sauce out of white beans, but they provide a beautiful creamy texture along with a good amount of protein. The addition of fresh lemon juice adds just the right amount of tang that compliments the mushrooms and broccoli. Alright, enough with the rambling description, get cooking VegHeads!

Super Easy, Creamy and Proteiny Pasta

Ingredients

  • 500 g. of “small” pasta. Could be shells, macaroni, rigatoni etc.

  • 1 medium sized onion, diced

  • 2 large heads of broccoli, chopped. Along with the florets you can use some of the tender stems too.

  • 8 mushrooms, sliced

  • 1/4 cup of toasted pine nuts or pumpkin seeds, toasted

  • 1 1/2 cup of white beans, cooked or canned

  • 1/4 cup of vegetable stock

  • 3 Tbsp of freshly squeezed lemon juice. About 1 1/2 lemons worth.

  • 2 Tbsp of olive oil

  • 1/4 cup of nutritional yeast

  • 1 large clove of garlic, minced

  • 1/2 tsp of salt

  • 1/2 tsp red pepper flakes

  • Ground black pepper

Directions

  • For the Sauce
  • To a food processor or blender, add the vegetable stock, white beans, lemon juice, olive oil, nutritional yeast, garlic, salt and red pepper flakes and blend until really smooth.
  • For the Main
  • Bring a large pot of salted water to a boil, add pasta and follow the instructions on the package to cook. Rinse and strain the pasta and put it back in the pot and set aside.
  • In a large frying pan over medium heat add a little oil. When the oil is hot add the onion and mushrooms and sautée until the onion becomes soft.
  • Add the broccoli and cook until the broccoli is cooked through. You can tell because it turns a dark green when cooked. Test a piece to be sure.
  • Add the onion and broccoli to the pasta pot and then stir in the sauce.
  • Top with the toasted seeds or nuts, your favourite fresh herbs like basil, cilantro or parsley and of course parmesan replacement.

Notes

  • We have been using chick pea pasta lately which not only tastes great, it adds a whack of protein to your meal.
