Kyla and I have been fascinate by the humble Lima Bean lately. I can’t even recall when or why we started noticing these giant legumes, but the are a couple of things that make this mysterious bean stand out. First of all they get called Lima, Giant and Butter beans, and let’s face it, even though we don’t eat butter it does sound good. Secondly, they aren’t that easy to find. Our regular retailer doesn’t stock them and so there’s a little effort involved in getting your hands on the king of beans. A friend of ours brought a can of Greek beans to a party and they turned out to be an oily, yummy version of Butter Beans along the lines of Dolmades. Since then I’ve been trying to come up with a slightly less oil intensive and yet still delicious Lima Bean dish. This is a simple dish with simple is an easy meal that be made ahead of time if you like. Give it a try and you won’t be disappointed.

Greek Style Butter Beans

Ingredients

  • 500 g. of dried butter (lima) beans

  • Olive oil

  • 4 large cloves of garlic, minced

  • 1 medium onion, diced

  • 2 ribs of celery

  • 1 tsp of dried oregano

  • 1 tsp of dried thyme

  • 1 540 ml can of diced tomatoes

  • 3 Tbsp of tomato paste

  • 2 tsp of smoked paprika

  • 1/2 tsp of salt

  • 1 cup of vegetable broth

  • Pepper to taste at serving time

Directions

  • Place the butter beans in a pressure cooker along with 4 cups of water, seal the lid and set for 30 minutes.
  • Pre heat your oven to 350° F
  • Heat a large frying pan over medium with a little olive oil and add the onions.
  • Fry the onions until translucent and then add the garlic and celery along with the1/2 tsp of salt and continue to cook for another five minutes.
  • Stir in the oregano and thyme and then the tomatoes, tomato paste and paprika.
  • Lastly stir in the cup of vegetable broth and slowly bring to a boil.
  • Add the prepared butter beans to the pan and mix well, again bring to a low boil and then remove from heat.
  • Pour the bean mixture into a large baking dish and bake for 45 minutes.
  • Season with pepper an serve with rice or dolmades or your favourite Greek side dish.
