This is a French inspired appetizer, so you know that it has lots of olive oil is nothing if not high calorie. That said it is a tasty little indulgence that is perfect for sharing at a party or with a summer meal. Local tomatoes are at their best in the coming months and this is an excellent way to enjoy one of nature’s gifts. The dough is easy to make and the toppings are simple. The tomatoes take on a sweet taste and the oil in the dough makes the crust almost like a pastry. There’s no competing flavours here, it’s all sweet tomato.

Cherry Tomato Pie

Ingredients

  • 1 large container of cherry or grape tomatoes, sliced

  • 2 medium sized tomatoes

  • 1 Tbsp of Dijon mustard

  • 1 small onion

  • 1 Tbsp of dried oregano

  • 1 tsp of dried basil

  • For The Crust
  • 2 1/2 cups of flour

  • 7 Tbsp of warm water

  • 7 Tbsp of olive oil

  • 1 1/2 Tbsp of instant yeast

  • 1 Tbsp of salt

Directions

  • Mix together the warm water, olive oil and yeast in a small bowl and let stand for 5 minutes. In a larger bowl combine the flour and salt. Stir the liquid into the flour using a spoon. When the dough starts for form use your hands to knead the dough for 5 minutes. Line a 9ish inch plate with parchment and place the dough on top. Spread the dough into an even layer similar to a pizza. Cover with a towel and let stand for and hour.
  • Heat your oven to 425° F
  • Slice the onion and dice the two tomatoes.
  • Spread the onion and tomato on a baking sheet lined with parchment along with the oregano and basil and toss with a Tbsp of olive oil.
  • Bake the onion and tomato mixture for 15 minutes. Remove from the oven and let cool.
  • Add the roasted veggies along with Dijon and a pinch of salt to a blender and blend until smooth.
  • When the dough is ready spread with a layer of the tomato, onion sauce.
  • Arrange the sliced cherry or grape tomatoes over the top and bake for 25 minutes or until the crust becomes golden brown.

Notes

  • Feel free to add some fresh basil or a little nutritional yeast before serving.
