According to the news, legumes are having a moment. We’re pretty happy about this because let’s face it, beans are the original plant based protein. This recipe is one that you need to plan ahead a little as it uses home made ricotta to add an extra creamy texture to the meal. White bean and tofu make up a protein punch in an otherwise simple dish. What we like about it is of course the flavour, but tofu and white bean chili is so different from regular, tomato based chilis. This is more than just a thick soup and is perfect on cool nights. Paired with fresh bread or corn bread and a salad this is a comfort food feast that everyone will enjoy.
Tofu and White Bean Chili

1 large red onion, diced
4 cloves of garlic, minced
2 ribs of celery, finely chopped
1 jalapeno pepper, cored and finely chopped
1 Tbsp of cumin
1 Tbsp of dried oregano
2 Tsp of smoked paprika
1/4 tsp of red pepper flakes
4 cups of vegetable broth
3 cups of cooked (or canned) white beans
1 block of firm tofu, cubed
1 1/2 cups of frozen corn
1/2 batch of home made ricotta (or 1 cup of store bought if you can find it)
Salt and pepper
Directions
- Preheat your oven to 425° F.
- Line a baking sheet with parchment and add the tofu to the pan. Add a little oil to the tofu and toss well before baking for 20 minutes. When the tofu is done set it aside.
- Over medium heat add 2 Tbsp of water, the onion, garlic, celery and jalapeno to a large pot and cook for 5 minutes.
- Add the vegetable broth along with the cumin, oregano, paprika and red pepper flakes and bring to a boil.
- When you reach a boil reduce the heat to simmer and add the beans, tofu and ricotta.
- Continue to cook for 10 minutes or so to allow the chili to become creamy and add salt and pepper to your tastes.

- More jalapeno can be added depending on your preference around heat and just how hot your jalapenos are.
