We’re in the middle of moving which means that we’re trying to use up everything in the kitchen, and time is at a premium. This quick sandwich spread ticks both of those boxes. Lentils are high in protein which makes this a great lunch when you’re on the go or feeding a hungry family. The consistency is like peanut butter and the flavour is savory which makes it perfect in a pita with some fresh veggies like tomato, cucumber or zucchini. This is a stove top recipe that you can whip up in half an hour and store for days in the refrigerator.

3/4 cup of dry red lentils
1 1/4 cups of vegetable broth
1/4 tsp of garlic powder
1/4 tsp of onion powder
Juice of 1/2 a lime
Pepper to taste
Directions
- Add the lentils, garlic, onion and broth to a pot. Bring to a boil and then turn down the heat and simmer the lentils for 15 to 20 minutes, stirring regularly. You want the lentils to break down and all the stock to be absorbed.
- When the lentils are fully cooked, remove from heat, add the pepper and lime juice and let cool. Stir the mixture until it takes on a spreadable texture.
- This spread is a great sandwich filler, alone or with your favourite veggies, on bread or in a pita pocket.
Notes
- This is a super versatile spread. You can add diced tomatoes and olives to give it a Mediterranean vibe. Try shredded carrot and cucumber for a fresh, cool taste. Even left over salad is a great addition to this sandwich… the sky’s the limit so use your imagination.
