Sometimes you just don’t feel like spending a tonne of time preparing and cooking a meal. We were finding that after the holidays. There was Christmas dinner, New Year’s dinner plus a birthday in there too, so now that January (Veganuary) is here we thought it would a good time to take it easy. Because these fritters are made with quinoa and chickpea flour they have protein as well and plenty of fibre. The outside is a crispy golden brown while the inside is soft and savory thanks to the plant based feta. Serve these as a main with your favourite condiment and some veggies or as a side. Either way these quick and easy spicy plant based fritters are a winner.
Spicy Plant Based Fritters

2 cups of fresh baby spinach
1 cup of frozen corn
1/2 of a bell pepper, finely chopped
1/2 of a small red onion, finely chopped
1/2 a small sweet potato, grated
1/2 cup of cooked quinoa
1/2 tsp of red pepper flakes
150 – 200 g. of plant based feta
2 cloves of garlic, minced
1 handful of coriander, chopped
1/2 cup of chickpea flour
2 tsp of paprika
1 tsp of chili powder
Salt and pepper to taste
Fresh lime juice, for garnish
Sweet chili sauce, for garnish
Directions
- Preheat the oven to 400° F.
- Line a baking sheet with parchment paper and spread 3 Tbsp of oil evenly over the sheet and put it in the oven while it is heating up.
- Place the spinach in a double boiler over high heat and cook until it is wilted. Try to squish out any excess water and then place it in a large mixing bowl.
- Add the corn, pepper, onion, potato, quinoa, red pepper flakes, feta, garlic, coriander, flour, paprika, chili powder, salt and pepper to the bowl and mix all the ingredients together along with 4 Tbsp of water. You want the mixture to be somewhat dough like so that you can form it into fritters/patties. If you need to, add water 1 Tbsp at a time and mix well until you get the right consistency.
- When the oven reaches 400°, form the dough into 8-10 fritters and place on the baking sheet.
- Bake for 12 minutes then flip the fritters and bake for another 12 minutes or until they look golden brown.
- Serve with lime and chili sauce or your favourite condiment.
Notes
- We have found plant based feta at the Costco Business Centre as well as at natural food stores. If you can’t find the feta, try using an alternative plant based cheese like Violife cheddar. It really does make these fritters extra special.
- For a great extra dip, add a 1/4 tsp of garlic powder and 1/2 tsp of paprika to a 1/2 cup of vegan mayo, mix well and voila.
