Often times a good dessert is tasty but also hundreds of empty calories. We’re always trying to bump up our protein where we can and that’s how these protein rich dessert squares got made. Chickpeas make a great flour substitute and when combined with nuts and chocolate you get a winner. I suppose these are really some sort of brownie, or are they a protein bar? See what I did there? There are about 170g of protein in a 9 x 13 pan so divided into say 40 squares you would get 4.5g per square, and since you can’t eat just one that’s more like 9g of protein in your dessert. Now that’s a win/win.
Protein Rich Dessert Squares

4 cups of cooked chickpeas
1/2 cup of coconut flour
1 1/2 cups of natural peanut butter
1 cup of maple syrup
3 tsp of vanilla
1 1/2 tsp of baking soda
1 1/2 tsp of baking powder
1/2 tsp of salt
1 1/2 cups of dark chocolate chips
1 1/2 cups of chopped walnuts
Directions
- Preheat your oven to 350° F
- To a food processor add the chickpeas, peanut butter, maple syrup and vanilla and blend until smooth. You can add a couple of Tbsp of oil or water if the mixture is too thick to blend well.
- In a large mixing bowl, blend together the flour, baking soda, baking powder, salt, chocolate and walnuts.
- Pour the chickpea mixture into the flour mixture and blend well.
- Evenly spread the batter into a 9 x 13 baking pan (or similar) and bake for 50 minutes.
- Let cool before cutting and serving.
