For the last few years Kyla has wanted to try making flat breads out of legumes. It’s the kind of Instagram post that you see and say “hey that’s cool we should try that” but then never do. Well say it no more because oops, she’s gone and done it. One of the neat things about these dosas is that you can use any assortment of small lentils or legumes. We used what we had which is what I imagine is the authentic way. Because these are made with legumes rather than flour they are protein rich. The perfect compliment to any Indian dish. Admittedly these take a little forethought with the soaking and all, but just get those lentils in water, go for a ski or whatever and then when you come back you’ll be ready to go.
Lentil Dosa with the Mosta

1/4 cup of dry Urad dal
1/4 cup of dry mung beans
1/2 cup of dry split red lentils
1 Tbsp of ginger, minced
1 tsp of cumin
1/4 tsp of red pepper flakes
1/2 tsp of salt
3/4 cup of water
Oil for frying
Directions
- Rinse and drain the legumes well in order to wash off the starches. Once rinsed place the legumes in a bowl, cover with water and let soak for at least 4 hours.
- Drain and discard the water from the legumes. Place them into a blender along with ginger, cumin, red pepper flakes, salt and water.
- Blend until you have a nice, consistent batter. You can add more water if you find the batter is too think to make a thin pancake.
- Heat a 1/2 tsp of oil in a frying pan. Once the oil is hot, pour a large pancake’s worth of batter into the pan. Fry until it starts browning on the bottom, flip and fry to get a nice even, brown finish.
- Repeat this process until all the batter is used up.
- Serve with any of your favourite Indian dishes.
Notes
- You can use whichever lentils you have on hand. I’m sure using just red lentils would work well. Yellow split peas are super protein rich too, so don’t be put off if you don’t have Urad Dal or Mung beans, just use a cup of what you’ve got.
