Ever since we were introduced to the concept of “the bowl” ten years or so ago we have embraced this simple and satisfying trend. Let’s face it though, what is a bowl but a fancy salad? So long as you have veggies a protein and an awesome sauce you’ve got a meal. There are tofu bowls, black bean bowls, lentil bowls and of course edamame bowls. The edamame adds a nice creamy texture to the common bowl and is packed with over 14 g. of protein per cup. So if you’re looking for a quick and easy summer time meal then this bowl will tick all the boxes for you.
Easy Edamame and Miracle Noodle Bowl

1 large carrot, shredded
1 large tomato, cut into wedges
1 sweet bell pepper, sliced
2 cups of frozen edamame beans
1 package of Miracle noodles (or mung bean glass noodles)
1/2 cup of fresh cilantro, roughly chopped
- For the Sauce
4 Tbsp of tamari or soy sauce
1 Tbsp of maple syrup
Zest of 1/2 of a lime
Juice of 1 lime
1 Tbsp of fresh ginger, minced
3 Tbsp of sesame oil
Directions
- Thaw the frozen edamame beans.
- Prepare the sauce by whisking all of the ingredients in a small bowl.
- Peel and shred the carrot.
- Slice the pepper and green onions.
- Cut the tomato into wedges.
- Chop the cilantro.
- Prepare the noodles as per the package.
- To assemble the bowl, arrange half of each ingredient nicely in two bowls or on two plates. Top with cilantro and sauce and serve.
Notes
- Originally we wanted to use mung bean, glass noodles that we had tried at a local restaurant. These proved hard to find so we eventually used soba noodles which are great but don’t have the protein of the glass noodles. The mung bean noodles are available on amazon and at specialty stores if you have the time to seek them out. Miracle noodles are made from mushrooms and are widely available.
