My dad loved date squares and it must be genetic because these sweet treats don’t last long around our house either. The beautiful thing about these Vegan Date Squares is that they have very few ingredients which keeps things simple. Oats are good for you. Dates are natures candy. I mean what else do you want? Dates are such a sweet fruit that no extra sugar is needed for the filling and the oat crust melts in your mouth. These are easy to make gluten free. I just used a combination of half gluten free flour and half almond flour with excellent results.

3 1/2 cups Medjool dates
2 cups of rolled oats
1 1/2 cups of brown sugar
1 1/2 cups of flour
1 cup of vegan butter/margarine
Directions
- Place the dates in a large bowl and cover completely with water. Let stand for 4 hours or overnight if you’re the plan ahead sort.
- Preheat your oven to 350° F.
- Drain the water from the dates and mash with a fork until they form a nice, creamy paste.
- In another large mixing bowl stir together the oats, sugar and flour.
- Add the margarine/vegan butter to the bowl and mash with a fork until a crumble mixture forms. You’ll know when it’s ready as the margarine will be evenly distributed and small chickpea sized pieces of crumble will form.
- Line a 9″ x 9″ baking pan with parchment paper and pour 2/3 of the crumble mixture into the pan. Using a wetted spoon press the crumble into the pan forming an even crust.
- Pour the date filling onto the crust and again using a wetted spoon spread the dates evenly over the crumble crust.
- Finally, spread the remaining crumble mixture on top of the dates, again pressing it lightly with a spoon.
- Bake for 30 minutes, remove from the oven to cool and then cut into squares.
