A salad using super-fresh ingredients is one of summer’s little pleasures. Arugula has become our favourite green. It has a great flavour and a hint of spice that just makes it so good whether in a salad or on a sandwich. The last few years we have grown arugula in the garden. It has to be one of the easiest vegetables to grow and it just seems to replenish itself over and over. If you haven’t tried arugula, then prepare to have your mind blown.
Summertime Arugula Salad

- For the salad
4 cups of fresh arugula
1/2 a red bell pepper
1/2 an English cucumber
8 garlic stuffed olives
You can add any of your favourites, like tomato, spinach, avocado or whatever makes you happy.
- For the Dressing
1/4 cup of olive oil
1 clove of garlic minced
1/4 cup of wine or balsamic vinegar
1 Tbsps of Dijon mustard
Salt and pepper to taste
Directions
- Prepare the dressing
- In a small bowl whisk together all the ingredients
- For the Salad
- In a very fancy serving bowl, add all the ingredients.
- Pour the dressing over the salad and toss well.
