I don’t know about you, but most days breakfast consists of the same old same old… peanut butter on toast. Yeah it’s a little dull, but it’s my thing. The addition of quick, homemade jam though, now that sweetens up the morning routine.
We can likely all agree that many of the foods we buy are way over packaged. Until recently we had 3 big bread eaters in the house. We would go through the better part of a loaf and a half of bread per day, which translates to one and a half plastic bags a day! As a family we were creating in the neighbourhood of 550 plastic bags of waste per year just from bread. And don’t get me started on plastic peanut butter jars!
The long and short of it is that if we are going to try and eat better for the environment then we need to pay attention to how our food is packaged. Consider making your own bread, jam or peanut butter along with hummus and other easy to make foods that tend to be over packaged.
Toast with PB & J

1/2 cup of frozen blueberries
2 Tsp of chia seeds
Peanut or almond butter
Your favourite bread
Directions
- Prepare the sauce
- Put the blueberries in a bowl and microwave them for 40 seconds, or let them thaw naturally.
- Stir in the chia seeds and let sit for 10 minutes. This will help thicken the jam.
- When the jam is ready toast up two slices of your favourite bread.
- Top the toast with peanut or almond butter and jam.
