This combination might sound a little odd but these burgers are excellent. They have a nutty, smoky taste thanks to the walnuts and paprika. We don’t have a BBQ but I’m told that they hold up well on a grill too. Unlike a lot of currently popular burgers, these smoky chickpea & walnut burgers are not trying to be something they’re not. These burgers are real food, made with ingredients you likely already have in the kitchen. Try them once and we think you’ll make them again.

1 cup of walnuts
1 3/4 cups of cooked chickpeas
1 cup of cooked quinoa
1 Tbsp of vegan mayonnaise
1 tsp of Dijon mustard
1 Tbsp of soy sauce
2 Tbsp of tomato paste (or 1/2 a tomato if you’re in a pinch)
1/2 tsp of garlic powder
1/2 tsp of onion powder
1 tsp of smoked paprika
Salt and pepper to taste
Directions
- Preheat the oven to 400 F.
- Add the walnuts to a food processor and blend until they become small chunks but not a flour. Transfer to a mixing bowl when done.
- Add the chickpeas, soy sauce and tomato paste to the food processor and again blend until chunky but not a paste. Transfer the chickpeas to the mixing bowl.
- Stir in the vegan mayo, mustard, garlic powder, onion powder, paprika salt and pepper. Finally stir in the cooked quinoa. If you have time, refrigerate for 1/2 an hour for best results.
- Using a 2/3 measuring cup, form the mixture into patties and place on a baking sheet lined with parchment paper.
- Bake for 15 to 20 minutes or until golden brown.
- Serve on a bun with your favourite burger fixings.
