Who doesn’t like walnuts and dates? These quick and easy date and nut balls are a classic flavour combination and a hint of coconut really brings them to a whole new level. With just five ingredients you can whip these up fast making them perfect for a snack or a dessert.

1 cup of Medjool dates
1 cup of walnuts
1/2 cup of shredded coconut (preferably unsweetened)
1/2 tsp of vanilla
1/4 tsp of salt
Directions
- Add all of the ingredients to a food processor.
- Blend until you get a nice consistent dough.
- Form the dough into small, bite sized balls and place on a cookie sheet lined with parchment paper.
- Eat them right away or cool in the refrigerate for an hour first if you have the will power.
Notes
- You can substitute the vanilla with a 1/2 tsp of rum for boozy holiday version.
