Well I stumbled across this “Snickers Bar” recipe and thought I’d give it a try. Changed it up somewhat of course… like added some quantities to the recipe?!? Anyway, we served this and of course they were a f*****g awesome “Snickers” squares hit. We put the rest away for another time which as it turns out was the next day, and the day after that. Hell ya, every day is a special occasion when you have these squares for dessert. Anywho, these are low on ingredients (just 7) and super yummy. Try them one Sunday dinner and you’ll be making them all the time. Seriously, just do it.
F*****g Awesome “Snickers” Squares

1 1/4 cup of raw cashews
2 3/4 cup of Medjool dates
2 tsp of vanilla
1/2 tsp of salt
1 cup of peanut butter
3/4 cup of peanuts, roughly chopped
1 cup of vegan chocolate chips
Directions
- For the Bottom Layer
- Add the cashews and 3/4 a cup of the dates along with 2 tsp of vanilla to a food processor and blend until you get a fine mixture.
- Line an 8″ x 8″ pan with parchment and pack down you cashew mixture into an even crust layer. Using the back of a wetted spoon works well for this.
- Put the crust into the freezer while you make the middle layer.
- For the Middle Layer
- Soak two cups of dates in boiling water for about 25 minutes.
- Drain off and discard the water.
- Add the dates along with the peanut butter and 1/2 tsp of salt to the food processor and blend until creamy smooth.
- Take the crust pan out the freezer and spread the date/peanut butter mixture evenly over the top of the crust, again using the wetted spoon.
- Sprinkle the 3/4 cup of chopped peanuts over the top of the date layer.
- Return the pan to the freezer.
- For the Top Layer
- Melt the cup of vegan chocolate chips in a microwave oven (or a double boiler if you’re old school). Try microwaving (yes it’s a verb) for a minute and see how they are. Stir and microwave for another two minutes and then stir again. You get the idea. Keep this up until the chips are very liquid and ready to pour.
- When the chocolate is ready, remove the pan from the freezer and spread the melted chocolate as evenly as possible over the top of the date/peanut butter mixture. Spread with the back of a wetted spoon if you need to.
- Return the pan to the freezer for 20 minutes or until the chocolate sets.
- Cut into squares and pig out.
