Great for pasta and scalloped potatoes too!
This is a fantastic sauce for pasta. It freezes well and is bursting with a cheezie, citrus flavour. I have also used this sauce to make scalloped potatoes which is great too. Just layer your sliced potatoes in a deep pan and top with sauce. Do this again to make two layers of potato and sauce. Top with a little shredded “cheeze”. Bake covered at 400° F for 35 minutes and then another 30 minutes uncovered. That’s way easier and better for you than traditional scalloped potatoes. White Bean Sauce

1 1/2 cups of cooked white beans
1/4 cup of vegetable broth
3 Tbsp of lemon juice (that’s about one large lemon’s worth)
2 Tbsp of olive oil
1/4 cup of nutritional yeast
1 large clove of garlic
1/2 tsp of red pepper flakes
Salt and pepper to taste
Directions
- Put all the ingredients in a blender and blend until smooth.
