Treat yourself in the morning with these oat and banana breakfast bars. They are super quick to make either when you get up or the night before. We like the way that you can bake them to be soft or more crispy by adjusting the cooking time. The banana helps keep them moist while the oats and optional nuts give you a nutritious start to your day without being heavy. You can take a few bars with you if you’re heading out for the day or even have them as a dessert.

1 cup of rolled oats
1 cup of oat flour
1 tsp of cinnamon
1 tsp of baking powder
1/4 tsp of salt
2 bananas, mashed
1/2 cup of oat milk
2 Tbsp of maple syrup
1/2 cup of walnuts, dates etc (optional)
Directions
- Preheat the oven to 350° F.
- In a large mixing bowl, stir together the oats, oat flour, baking powder, cinnamon and salt.
- In a separate bowl, mash the banana and add the oat milk and maple syrup and mix well.
- Add the banana mixture to the dry ingredients and mix well. Add the walnuts now if you are using them.
- Pour the batter into a prepared 8″ x 8″ baking pan
- Bake for 18 to 20 minutes or until the top begins to brown. The longer you bake them the crunchier they will become.
- Cool before cutting and serving.
