When you’re a vegetarian family and your wife finds out she is Celiac, you can bet that invitations to dinner will pretty much dry up. Yup whenever I see those Facebook videos where people make fun of “outrageous” food restrictions like vegetarian/gluten free I am forced to say, damn, that’s us.
All that aside, when it comes to making a dessert that all of us can eat and doesn’t taste like cardboard (sorry dear) it ain’t easy. I came across a gluten free, peanut butter cookie recipe a couple of years ago and made it better by adding chocolate.
This is too easy and is as good as a “regular” peanut butter, chocolate chip cookie.

Super Easy Vegetarian, Gluten Free Peanut Butter Chocolate Chip Cookies

1 cup of brown sugar
1 egg
1 cup peanut butter
1/2 cup chocolate chips
Directions
- Preheat oven to 350 F
- Combine all the ingredients in a large bowl
- Scoop individual cookies onto a baking tray
- Bake for 12 to 15 minutes
- Let cool before devouring
Notes
- Let cool and eat. Trust me they are way better once cooled, so be patient.
- This is one of those recipes that you can double or triple without any problem. Just remember 1, 1 and 1 and you’re good to go.
