Summer rolls are a perfect meal on a hot day. While rolling these tasty, flavour bombs takes a little time, it is definitely worth the effort. We usually have these Asian inspired, rolls a few times a year and they’re always a hit. It’s like taking a dinner salad to the next level. So don’t be frightened off by the rolling part, it’s easy to perfect your technique. They’re also great to take to a summer potluck or picnic.

Ingredients

  • 1 cup of dry green or brown lentils

  • 24 rice paper wraps

  • 1 large carrot, shredded

  • 2 cups of cabbage, shredded

  • 4 green onions, finely chopped

  • 1 English cucumber, finely chopped

  • 1 red bell pepper, cut into strips and then halved

  • 1/2 cup of fresh mint, finely chopped

  • For the sauce
  • 1/2 cup of peanut butter

  • 2 Tbsp rice vinegar

  • 1 tsp of sriracha or 1/4 tsp red pepper flakes

  • 2 Tbsp of tamari or soy sauce

  • 1 Tbsp of sesame oil

  • Juice of 1 lime

  • 1 small clove of garlic, minced.

  • 1/4 cup of water (for thinning)

Directions

  • Bring a pot of water to a boil and add the lentils. Simmer for 5 to 10 minutes. Test the lentils once in a while. You want them firm and not mushy.
  • Add all the vegetable ingredients to a large mixing bowl.
  • In a medium sized bowl mix together all the sauce ingredients and stir well.
  • The sauce should be thin but not to runny so add water sparingly, a little bit at a time. You want the sauce to be able to coat the vegetables without being watery.
  • Pour the sauce over the vegetables and coat the veggies evenly.
  • Fill a frying pan with warm water and put on the stove at the lowest heat.
  • Place a rice wrap in the water for about 10 seconds, until it begins to soften. Be sure not to over soften the wrap.
  • Place the wrap on a flat surface and place a spoonful of the veggie mixture in the middle of wrap.
  • Fold in the two ends so that they overlap slightly. They will stick together.
  • Roll the loose end of the wrap over the middle and continue to roll until the entire wrap is rolled. See the short video for a visual.
