We’re always on the lookout for a quick dessert for Sunday nights. Kyla Came across this idea on Instagram which I have to say is a great source for veggie news and ideas. While she calls it a brownie I thought it had more pudding vibes. Either way this simple chocolate pudding/brownie will not disappoint. With just a handful of ingredients it’s the kind of dessert that you can whip up in a hurry, leaving you more time for the fun stuff.
Simple Chocolate Pudding/Brownie

1 banana, mashed
2 Tbsp of peanut butter
3 Tbsp of maple syrup
2 Tbsp of flour (gluten free works too)
2 Tbsp of cacao powder
1/4 tsp of baking soda
1 Tbsp of plant based chocolate chips, plus a few more to sprinkle on top.
A few peanuts, chopped (optional)
Directions
- Preheat the oven to 350° F.
- In a mixing bowl, mash the banana.
- Stir in the peanut butter, maple syrup, flour, cacao powder, baking soda and chocolate chips.
- Pour the batter into a small baking dish.
- Sprinkle a few more chocolate chips on top.
- Bake for 15 to 20 minutes.
- Pig out.
Notes
- Baking for 15 minutes will leave the inside of the pudding quite soft and runny. An extra five minutes in the oven will firm things up a bit. Depends on what you like.
- You can sprinkle a few chopped peanuts on the top too if that’s your thing.
