OK so this might be my new favourite lunch. It takes only minutes to make, uses few ingredients and tastes excellent. As I bit into this exact piece of sautéed veggies on pesto toast I felt like I was having pizza from a hip shop downtown. The pesto just makes the veggies and fresh toast pop. It’s a good thing I only made one piece or it would have been an excessive lunch. I used homemade pesto that we made from the basil from the garden but I know you can buy vegan pesto at most natural food stores. Do yourself a favour and get your hands on some and make this for yourself.
Sautéed Veggies on a Pesto Bun

4 large mushrooms, sliced
1 bell pepper, sliced into strips
1/2 of a medium red onion, cut into rings
Your favourite bread or bun
1 Tbsp of olive oil
Vegan cheese shreds (optional)
Directions
- Prepare the vegan pesto if you’re making it from scratch. It’s super easy and delicious, maybe better than original pesto. Just saying.
- Heat a frying pan over medium heat and add the oil.
- Add the veggies to the frying pan and sauté until well cooked. This is a matter of taste, so do them as you like.
- Toast your bread or bun until golden brown but no more.
- Spread a healthy serving of pesto on your toast and top with the veggies.
- Sprinkle with a little vegan cheese if you feel so inclined.
- Serve open-faced and enjoy.
