You cannot believe that these truffles have only a few ingredients and that the main on is dates. These are so delicious and easy to make and yet so sophisticated that you could serve them at a fancy dinner. A guaranteed winner every time. Bet you can’t eat just one!
Salted Caramel Truffles

500 g of Medjool dates
1/2 tsp of sea salt
1 cup of dairy free dark chocolate chips
1 Tbsp of melted coconut oil
Directions
- Place dates in a bowl of hot water for 10 minutes to soften.
- Place the dates in a blender and blend until they form a loose sort of dough. You can add a little water to the mix if it is too hard to blend.
- Add the sea salt to the mixture and continue to blend.
- Spoon small balls of the date mixture onto parchment paper and put in the freezer for 30 minutes.
- Place the chocolate chips and coconut oil into a microwavable bowl and microwave for 30 seconds. Stir the chocolate and microwave again for 30 seconds. Repeat this process until the chocolate is smooth and runny.
- Remove the date balls from the freezer and coat each ball in the chocolate. You can try to dip them or drizzle the chocolate over the top.
- Sprinkle a little more salt on each ball and freeze again for another 30 minutes.
- Now try to eat just one….
