When it comes to “loaded” toast, you’ve probably seen it all. Let’s face it, you can put pretty much anything on there from peanut butter to avocado and it will taste great. Well here’s something you might not have tried. Delicious fried mushrooms seasoned with apple and parsley on your favourite toast is a twist on a classic. This is a super easy and quick lunch or breakfast that will leave you wondering why you hadn’t thought of it before.

Fried Mushrooms with Apple on Toast

Ingredients

  • 8 medium sized white or brown mushrooms, chopped

  • 1/2 medium granny smith apple, peeled, cored and chopped

  • 1 clove of garlic, minced

  • 1/4 cup of fresh parsley

  • 2 Tbsp of soy sauce

  • Fresh black pepper, ground

  • Olive oil

  • 2 slices of your favourite bread (for toast)

Directions

  • In a frying pan over medium heat add a tsp of olive oil.
  • When the oil is hot add the mushrooms and cook for 2 minutes.
  • Add the apple to the pan and continue to cook until the mushrooms become soft.
  • Add the garlic and continue to cook for a minute.
  • Lower the heat, add the soy sauce and stir well.
  • At this point make the toast.
  • Add the parsley and pepper to the frying pan, stir well and turn off the burner.
  • When the toast is ready, top with the mushroom and apple mixture and enjoy.
