It’s that time of year when outdoor parties are starting to happen and side salads are required. This magnificent marinated mushrooms dish is the perfect bring along or compliment to dinner at home. The simple ingredients and low prep time make this a quick and easy veg salad that you’ll make again and again. Umeboshi, Japanese plum vinegar is pretty easy to find so don’t let that stop you from trying this dish. It’s hard to believe that something so simple can taste so good. If you can’t find button mushrooms, just buy the larger ones and halve or quarter them as necessary as we did in this picture.
Magnificent Marinated Mushrooms

500 g. of white button mushrooms (or larger mushrooms halved or quartered)
2 Tbsp of olive oil
2 Tbsp of umeboshi vinegar (see notes below)
1 clove of garlic, minced
1 tsp of dried basil or 8 leaves of fresh basil, finely chopped
1/4 tsp of black pepper
Directions
- Bring a large pot of water to a boil and add the mushrooms. Boil for about a minute to a minute and a half.
- Drain the mushrooms and let cool for 10 minutes.
- In a small bowl mix together the oil, vinegar, garlic and basil and pepper.
- When the mushrooms have cooled off, place them in a serving dish.
- Pour the dressing on the mushrooms and toss well.
- Refrigerate until needed, and prepare to be wowed. We find that the longer you let the mushrooms marinate the better.
Notes
- Umeboshi vinegar is a Japanese plum vinegar that you can find at natural food stores or online. It’s worth having on hand because you’re going to make this dish again and again.
