  • 1/4 cup of corn starch

  • 2 Tbsp of chia seeds or flax meal

  • 1 tsp of rosemary, chopped

  • 1/2 tsp of salt

  • 1/8 tsp of garlic powder

  • 3 Tbsp of olive oil

  • 4 Tbsp of cold water

  • Preheat the oven to 325° F
  • To a large mixing bowl add the oat flour, almond flour, corn starch, flax meal, rosemary, salt and garlic powder and stir until well combined.
  • Add the oil and and continue to stir until the mixture becomes crumbly.
  • Add the water 1 Tbsp at a time, stirring well each time. You want the dough to become moldable, not crumbly or too sticky.
  • Form the dough into a ball and place between two pieces of parchment paper on your counter top.
  • Roll the dough until it is a uniform 1/8 inch thick sheet.
  • Use a knife or cookie cutter to create crackers that are roughly 3 cm in diameter. This should give you about 50 to 60 crackers.
  • Move the crackers to a large baking sheet lined with one of the sheets of parchment paper and place in the freezer for 10 minutes.
  • Place the baking sheet in the oven and bake for 15 to 20 minutes. Keep an eye on them as you want them to be golden brown not burnt.
