Most of us have had asiago and artichoke dip at one party or another. This version uses white beans to provide the creamy texture. It’s a source of protein, it’s super tasty and way better for you and the planet. The lemon and nutritional yeast are the stars of the show here. This one is great to bring to a party. No one will guess that it’s bean based.
White Bean and Artichoke Dip

1 – 14 oz. can (398 ml.) of white beans, rinsed and drained.
1 – 14 oz -ounce can (398 ml.) of artichokes hearts drained. Keep a few artichokes separate and chop finely.
2 cloves garlic
3 Tbsp tahini paste
3/4 Tsp salt
1/4 Tsp cracked pepper
Juice of 1/2 a lemon
Zest of 1/4 of a lemon
1 Tbsp nutritional yeast
Directions
- Remove 4 artichokes from the jar or can, dice them and set aside.
- Add the beans, un-diced portion of artichokes, garlic, tahini, salt, pepper and lemon juice to a food processor and blend until smooth.
- Put the dip in a serving bowl add the diced artichokes and mix well.
- Stir in the lemon zest a little at a time to get the desired flavour.
- Serve with bread, crackers or cut vegetables.
Notes
- Garnish with cilantro if you’re a fan.
