Around our place the recipes we try fall into two main categories; “meh” and “make again”. You’ll be glad to know that these banana and date muffins got a definite “make again” rating from the critics. These are so simple and quick that you can make them in the morning or the night before. They are moist and flavourful with the goodness of oats, fresh dates and banana. You can bring these to a brunch or throw a couple in your lunch.

Ingredients

  • 2 cups of rolled oats

  • 3 ripe bananas

  • 3/4 of a cup of dates

  • 1 Tbsp of baking powder

  • 2 tsp of apple cider vinegar

  • 1/2 cup of oat milk or water

  • 1/4 cup of peanut or almond butter

Directions

  • Preheat the oven to 350° F and prepare 12 muffin cups.
  • Add the oats and baking powder to a blender and blend until the oats are a nice flour consistency.
  • Put the flour and baking powder mixture into a large mixing bowl.
  • To the blender add the bananas, dates, nut butter, apple cider vinegar and oat milk and blend until smooth.
  • Add the the wet ingredients to the flour bowl and gently stir together.
  • Fill the muffin cups to about 3/4 full.
  • Bake for 20 to 25 minutes. Use the “clean toothpick” trick to be sure they are baked through.
  • Let cool and enjoy.
