Around Christmas time Kyla bought a box of “house brand” seed crackers from a local specialty grocer. These crackers were pretty good, made with lots of seeds and good stuff but still light, crisp and not too dense and hard like that kind of thing can be (think Mary’s). While the product was good, the price tag was something else, along the lines of $9 for a smallish box… and a plastic box to boot. At that point Kyla decided that she would try making her own seed crackers. She looked up some recipes and started experimenting and after a few variations she nailed it. I swear these crackers are better than store bought.

Better Than Store-bought Seed Crackers

Ingredients

  • 2 cups of water

  • 1.5 cups sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1 cup sesame seeds

  • 1/3 cup hemp seeds

  • 1/2 teaspoon salt

  • 1 teaspoon dried rosemary or your favourite herbs

  • 2 tablespoon psyllium husk flakes

Directions

  • Mix the dry ingredients in a large mixing bowl and then add water and stir well.
  • Set aside for about 20 minutes to allow the psyllium to thicken the mixture.
  • Preheat the oven to 300ºF.
  • Line a large baking sheet with parchment paper and transfer the mixture over to the baking sheet. Use a large spoon or spatula to spread into a thin (and even) layer, about 5 – 6 mm or 3/16 – 1/4 inch thick. You can use two pans if needed.
  • Bake in the oven for 80 minutes. You can adjust the baking time as every oven is a little different. You want the crackers to be golden brown but not burnt. Keep an eye on them as they can burn quickly.
  • Remove the crackers from the oven and let cool. Break the crackers into pieces and store in an air tight container.

Notes

  • When pressing the dough into the pan be sure that the thickness is consistent. If the edges are thin they will burn before the center is baked through.
  • You can experiment by adding different herbs and spices.
  • You can buy psyllium husks at pretty much any health/bulk food store.
