minutesTostadas are a quick and versatile lunch, snack or dinner. You can spice them to your liking and add whatever vegetables you want. This recipe is a classic middle of the road version, but if you like hot try adding some jalapeno peppers. If you’re not into vegan cheese it’s optional and the tostadas are still yummy.
Ingredients
3 corn tortillas or tostadas
3/4 cup of cooked black beans
1/2 medium tomato chopped
1/4 small red or sweet onion chopped
1/2 medium red pepper chopped
Pinch of salt
1/2 tsp cumin
1/8 tsp chili powder
Juice of half a lime
1/8 cup fresh cilantro chopped
Black pepper to taste
1/4 cup shredded vegan cheese (Violife is a good choice) – Optional
1/2 a medium avocado diced
Directions
- Preheat the oven to 350
- Mash all the ingredients except the tortillas in a large bow
- Spread 1/3 of the bean mixture on each tortilla
- Bake until the cheese is melted and the tortilla is starting to brown on the edges
- Top with avocado and enjoy.
Notes
- This is also nice with a bit of salsa on the side if you have some kicking around.
