Every once in a while the Costco has these roasted chickpeas that we quite like. They aren’t always available though so we have tried over the years to perfect the method of making our own roasted chickpeas. It isn’t difficult but you do have to pay attention so when you do these be ready to pull them from oven at a moment’s notice. The spices here are quite mild so if you want a little more heat feel free to play with the chili and salt quantities. Chickpeas are a great snack because they are pretty high in protein. These spicy roasted chickpeas travel well too so they’re excellent whether you’re at home or on the go. You can do these with canned or cooked chickpeas if you want, but after several attempts and different combinations it became obvious that using the soaking method produced more consistently crunchy and evenly roasted chickpeas.
Spicy Roasted Chickpeas

4 cups of soaked chickpeas
2 Tbsp of olive oil
1 tsp of garlic powder
1 tsp of salt
1 tsp of paprika
1/2 tsp of chili powder
1/2 tsp of cumin
Directions
- Preheat the oven to 400° F
- Soak 2 cups of chickpeas in a large bowl of water over night.
- When you’re ready to go, drain the chickpeas and pat dry with a towel to remove any excess water.
- In a mixing bowl combine the olive oil and spices
- Add the chickpeas and stir so that they are well coated in the sauce.
- Line a baking sheet with parchment paper and spread the chickpeas evenly over the sheet.
- Bake for 60 to 65 minutes, stirring every 15 minutes to get an even bake. You want the chickpeas to be a nice dark brown colour. Beware though, there is very little time between crunchy and brown and burned so at the end of the cycle keep an eye on your chickpeas!
- Remove from the oven and let cool before eating.
Notes
- Mixing the chickpeas throughout the baking is important so that the ones at the edge don’t burn. This will also allow all the chickpeas to get crunchy. The chickpeas will get crunchier and taste better when they cool so do yourself a favour and wait before eating them.
