This year seemed to produce a bumper crop of fresh tomatoes, and there is nothing better than a salsa made with fresh tomatoes. This recipe has a little heat thanks to the jalepeno pepper and a fresh flavour thanks to cilantro and lime. Paired with your favourite tortilla chips this salsa makes a great snack. This is such an easy salsa that you can make a batch and keep it in the fridge. It goes well with burritos or tostadas as well.

Ingredients

  • 4 cups of fresh tomato, roughly chopped

  • 3 or 4 cloves of garlic, roughly chopped

  • 1 jalepeno pepper, cored and roughly chopped

  • 1 tsp of balsamic vinegar

  • 1 sweet onion, roughly chopped

  • 1 medium bell pepper, roughly chopped

  • Juice of 1 lime

  • 2 tsp of ground cumin

  • 2 tsp of ground coriander

  • 2 tsp of dried oregano

  • 1 cup of fresh cilantro, roughly chopped

  • 1 tsp of salt (you can add more to suit your tastes)

  • 1/2 tsp of ground black pepper

Directions

  • Place all the ingredients in a blender and blend until the salsa becomes the desired consistency. To get it started try pulsing the blender until the salsa begins to break down.
  • Serve with tortilla chips.
