Another cook book that we started out with is called Feeding the Healthy Vegetarian Family. While we passed this on at some point it did have some great recipes and ginger, peanut noodles is one of them. This is a super fast and fresh recipe to make and since it is served cold you can take it with you. Perfect for a hot day. It can easily be doubled if you need more. Served with a side it could be a great dinner too.
Fast and Flavourful, Ginger, Peanut Noodles

500 g of thin noodles like spaghettini
1/4 cup of natural peanut butter
1 Tbsp of fresh ginger, minced
1 clove of garlic, minced
2 Tbsp of rice vinegar
3 Tbsp of tamari or soy sauce
2 Tbsp of sesame oil
1 tsp of sriracha or chili sauce
1/4 cup chopped peanuts (optional)
1/4 cup of fresh chopped cilantro or basil (for garnish)
2 lime wedges
Directions
- Bring a large pot of salted water to a boil. Add the noodles and cook until al dante, about 10 to 12 minutes.
- In a small bowl stir together the peanut butter, ginger, garlic, rice vinegar, tamari, sesame oil and chili sauce.
- When the noodles are ready, rinse and add to a large mixing bowl.
- Pour the sauce over the noodles and toss well.
- Serve cold topped with chopped peanuts and herbs and drizzled with fresh lime juice.
