Back when we were vegetarian and weren’t concerned with gluten, there were a tonne of great chocolate chip cookie recipes. Since going vegan and finding out that Kyla has celiac disease, crushing that cookie craving has become more of a challenge. I found a decent recipe and modified it slightly to come up with this Melt in Your Mouth Chocolate Chip Cookies recipe. It’s pretty simple and produces cookies that are soft rather than crumbly. They’re perfect for making vegan ice cream sandwiches or just satisfying your sweet tooth.

Chocolate Chip Cookies That Melt in Your Mouth

Ingredients

  • 2 1/4 cups of oat flour

  • 1/2 tsp of baking soda

  • 1/4 tsp of salt

  • 2/3 cup of vegan margarine like Becel

  • 2/3 cup of brown sugar

  • 1/2 cup of white sugar

  • 1/3 cup of oat milk (or other plant based milk)

  • 1 Tbsp of vanilla

  • 1 cup of plant based chocolate chips

Directions

  • Mix all the ingredients together in a mixing bowl to form a batter.
  • Refrigerate the batter for 1/2 an hour or more.
  • Preheat your oven to 180° C (350° F)
  • Line two baking sheets with parchment paper.
  • Form 24 equal sized cookies and place on the baking sheets.
  • Bake for 12 minutes or until the edges begin to brown being careful not to over bake.
  • Let the cookies cool before devouring.
