I don’t normally go for sweet main courses, but this sweet and sour tofu is pretty good. It definitely has the contrasting flavours that you would expect from this classic Asian inspired dish. Aside from the pineapple this recipe uses ingredients you probably already have so there’s not much to plan here. The sauce is tasty and blends well with a side of rice. By using an air fryer to cook the tofu, the whole process is super fast and easy. This could easily be a weeknight meal when you’re short on time but still looking for a high protein and delicious stir fry option.
Sweet and sour tofu (air fryer version)

1 package of extra firm tofu
1 medium red onion, diced
1 red bell pepper. diced
1 large carrot, sliced
3 Tbsp of fresh ginger, crushed
3 cloves of garlic, crushed
1/2 cup pineapple juice
1/2 cup of pineapple chunks
1/2 cup of vegetable broth
3 Tbsp of rice vinegar
3 Tbsp of tamari or soya sauce
1 Tbsp of ketchup
1 Tbsp of corn starch (plus 1/4 cup for dredging the tofu)
Olive oil for cooking
Directions
- Heat a large frying pan or wok with a little olive oil over medium heat.
- Add the onion, pepper and carrot to the pan and fry until the carrot is soft.
- turn off the heat and set the vegetables aside on a plate or bowl.
- To a small mixing bowl add the ginger, garlic pineapple juice, broth, vinegar, soy sauce and ketchup and mix well.
- In a small bowl combine a Tbsp of corn starch with 2 Tbsp of water and mix into a slurry. Add this to the sauce and mix well
- Cut the tofu into bite size pieces and place in a mixing bowl.
- Toss the tofu in a little olive oil and then sprinkle a few Tbsp of cornstarch over the chunks. Continue to toss until all the pieces of tofu are coated in cornstarch.
- Cook the tofu in an air fryer at 480° F for 12 minutes.
- Reheat your frying pan or wok and add the sauce.
- Bring the sauce to a boil, reduce heat and continue to stir until the sauce begins to thicken.
- Add the vegetables and pineapple chunks to the pan and stir well.
- When the vegetables are hot again stir in the tofu and cook for a couple of minutes more.
- Serve over rice or noodles.
Notes
- If you don’t have an air fryer you can achieve similar results by baking the tofu on a parchment paper lined baking sheet for about 25 minutes at 425° F.
