There aren’t too many fruits that are better than a fresh apple. If you’re lucky enough to live in a region where apple season is a thing than you know what I mean. Sometimes though your eyes are bigger than your stomach and you end up with too many apples. When that happens try this Gluten Free and Vegan Apple Cake. With only 9 ingredients chances are you already have what you need. It’s a very moist cake that keeps well. It’s a delicious dessert or a little indulgence with a coffee or tea. Give it a go while apples are aplenty.

Ingredients

  • 1 cup of oat (or similar) milk

  • 3/4 cup of brown sugar

  • 1/4 cup of vegetable oil

  • 1 cup of almond flour

  • 1 cup of gluten free, all purpose flour

  • 1 Tbsp of baking powder

  • 1 Tbsp of cinnamon

  • 1/2 tsp of salt

  • 4 medium sized apples

Directions

  • Preheat your oven to 375° F.
  • Grease the sides and bottom of a 9″ spring form pan. See notes.
  • In a large bowl whisk together the milk, sugar and oil.
  • Slowly stir in the flours, baking powder, cinnamon and salt then stir vigorously until the batter thickens.
  • Core, peel and cut two of the apples into small, rough chunks and fold them into the batter.
  • Pour the batter into your pan.
  • Core the remaining two apples. Cut them into thin slices and arrange in overlapping circles on the top of the cake.
  • Bake for 70 minutes.
  • Remove from the oven and let cool before serving.

Notes

  • You can use a regular cake pan if you don’t have a spring form pan.
