I don’t know about you, but I love banana bread! Your typical loaf will have eggs that help everything stay together. When Kyla first started substituting eggs with flax I wasn’t a huge fan, but now that she has discovered you can do the same thing with chia seeds life is good. This version of vegan banana bread is super moist and oh so delicious. As a bonus this uses apple sauce rather than oil.

Ingredients

  • 3 medium ripe bananas

  • 1/2 tsp of vanilla extract

  • 1 chia egg (1 Tbsp chia seeds mixed with 3 Tbsp of water and let stand for 10 mins.)

  • 3 Tbsp of apple sauce (or oil)

  • 1/4 cup of brown sugar

  • 6 Tbsp of maple syrup

  • 3 1/2 tsp of baking powder

  • 3/4 tsp of salt

  • 3/4 tsp of cinnamon

  • 3/4 cups of oat milk

  • 1 1/4 cup of almond flour

  • 3/4 cups of oat flour

  • 1/2 cup of corn starch

  • 1 1/4 cup of gluten free oats

Directions

  • Preheat the oven to 350° F.
  • In a large bowl mash together the bananas, vanilla, chia egg, apple sauce, sugar, maple syrup, baking powder, salt, cinnamon and oat milk.
  • Stir in the almond flour, oat flour, corn starch and oats.
  • Pour the batter into a loaf pan and bake for 1 to 1 1/4 hours.
  • Let cool and enjoy.
