Bananas are a good start to your day and are even better when you make them into pancakes. This simple, gluten free vegan twist on the classic is great with the addition of blueberries and of course maple syrup.

Ingredients

  • 2 medium very ripe banana

  • 1 1/2 Tbsp maple syrup

  • 2 Tsp baking powder

  • 1/4 Tsp sea salt

  • 1 1/4 cups non-dairy milk like oat milk

  • 1 cup oat flour

  • 3/4 cup buckwheat flour (or regular flour)

  • 1/4 cup blueberries

Directions

  • Add the banana to a large bowl and mash.
  • Add the maple syrup, baking powder, and salt and stir well.
  • Add the non-dairy milk and stir well.
  • Add oat flour and almond flour. Stir to combine but don’t over mix.
  • Cook the pancakes on a hot griddle until browned on both sides.
  • Serve with blueberries and maple syrup
