  • 1 Tbsp of maple syrup

  • 3 Tbsp of melted coconut oil

  • 1/2 tsp of salt

  • For the Middle Filling
  • 12 Medjool dates

  • 1/3 cup of peanut butter

  • 1 Tbsp of melted coconut oil

  • 1 tsp of vanilla extract

  • For the Topping
  • 1 cup of vegan chocolate chips

Directions

  • Preheat your oven to 180° C (350° F)
  • Put the 12 dates in a bowl, cover with hot water and set aside.
  • In a bowl mix together the flour, maple syrup, coconut oil and salt into a dough.
  • Press the dough evenly into a 23 cm (9″) square pan.
  • Bake the crust for 12 minutes and then remove from the oven and set aside. You can turn off the oven too.
  • Drain the dates and put them into a food processor along with the peanut butter, coconut oil and vanilla and blend until really smooth. If it is difficult to blend you can add a Tbsp of water to the mixture.
  • Spread the the peanut butter mixture evenly over the cooled crust layer.
  • Melt the vegan chocolate chips in the microwave. We find it best to microwave for 1 minute at a time until smooth.
  • Spread the chocolate evenly over the peanut butter layer and let the squares cool.
  • Cut into long thin bars, like a Twix and enjoy.
