Here’s a quick dessert for when you’re in a hurry. These vegan, gluten free Twix bars are simple and delicious. They would be great for a Sunday dessert or at your next super fancy tea party… because we’re all having tea parties these days. Seriously though you don’t need to spend a tonne of time to make a great sweet treat. Try these out and I bet the pan will be gone in one sitting.

1 1/4 cups of oat or almond flour
1 Tbsp of maple syrup
3 Tbsp of melted coconut oil
1/2 tsp of salt
- For the Middle Filling
12 Medjool dates
1/3 cup of peanut butter
1 Tbsp of melted coconut oil
1 tsp of vanilla extract
- For the Topping
1 cup of vegan chocolate chips
Directions
- Preheat your oven to 180° C (350° F)
- Put the 12 dates in a bowl, cover with hot water and set aside.
- In a bowl mix together the flour, maple syrup, coconut oil and salt into a dough.
- Press the dough evenly into a 23 cm (9″) square pan.
- Bake the crust for 12 minutes and then remove from the oven and set aside. You can turn off the oven too.
- Drain the dates and put them into a food processor along with the peanut butter, coconut oil and vanilla and blend until really smooth. If it is difficult to blend you can add a Tbsp of water to the mixture.
- Spread the the peanut butter mixture evenly over the cooled crust layer.
- Melt the vegan chocolate chips in the microwave. We find it best to microwave for 1 minute at a time until smooth.
- Spread the chocolate evenly over the peanut butter layer and let the squares cool.
- Cut into long thin bars, like a Twix and enjoy.
